New work finished. It’s been a big week of late nights and too much music. I am LOVING this song at the moment and can’t get enough of it.
The most F***ing spectacular cake you will ever have in your life.
We had a couple of bananas in need of a good home and an insane amount of chocolate in the cupboard so yesterday I fiddled with a recipe and made a melt and mix banana and chocolate cake.
- 3 tablespoons of butter
- 1 cup self-raising flour
- 2 tablespoons of cocoa
- 3/4 cup castor sugar
- 2 eggs
- 1/2 cup of milk
- 1 teaspoon vanilla essence
- 2 bananas
- 1 x 250gm block of dark chocolate
- 2-4 tablespoons of cream
Melt butter, mash banana, add eggs, cocoa, sugar, milk, flour and vanilla essence. Give it a good stir
Melt 1/2 of the chocolate and mix in.
Pour into a greased loaf tin and cook at 160 (fan forced) or 180 (standard) for about 35 minutes or until it springs back when you touch it lightly.
Leave it to cool for 5 minutes before turning it out onto a rack.
Prepare the icing:
Melt the remainder of the chocolate, add the cream bit by bit until you reach the desired (genache) consistency. Spread it over the top – and leave the cake to cool down for 10 minutes before digging in to it still warm (we just couldn’t wait).
It was so good I broke my rule and had another piece at 11pm. 🙂
I think I may need to go and have another immediately….
