
There has been a lot of this lately.
Liquid lunch, standing, while painting. Loving it.

Zucchini Soup:
- 6 large zucchini
- 2 large onions
- 3 tsp chicken stock powder
- 6 cups hot water
- knob of butter
- splash of olive oil
- salt to taste
Dice onions and zucchini and toss into large saucepan with olive oil and melted butter. Stir until zucchini and onion are soft (about 10-15 mins).
Add chicken stock powder, stir through, add hot water, stir to combine and bring to the boil.
Blend with a hand-held stick blender (Bamix) and enjoy.
Damn this is good, it’s amazing that an ordinary vegetable can taste this flavoursome. Even better with Basil and garlic naan bread from back here. Of course the children won’t touch it. I wonder if I peeled the zucchini next time and called it something mystical…… Hmm. I’ll let you know.
